Teaching from Northern Colorado: My Summer in Evans and Greeley

The relentless humidity of the Texas Gulf Coast had long dictated my summer routine—sticky mornings, scorching afternoons, and evenings best spent indoors. This year, I craved something different. With the world more accessible than ever, I hitched my RV, set my GPS northward, and mountain landscapes of Northern Colorado. Remote teaching has its perks!



Evans, Colorado: A Hidden Farming Oasis


Arriving in early May, I was met with mild weather and a friendly RV park that felt like a secret hideaway. Behind my campsite, a gate opened onto Evans City Park, revealing a paved trail along the South Platte River. Instead of crowded beaches and humid air, I now enjoyed a simple morning routine: a short walk under cottonwoods, the gentle rush of the water, and glimpses of wildlife. Baseball fields and soccer pitches buzzed with local life, and I quickly realized that this quiet, farming community would be my springboard for Northern Colorado adventures.





Downtown Greeley: An Unexpected Arts Scene 



Just a short drive away, Downtown Greeley offered a vibrant contrast to Evans’s rural charm. Historic façades and art deco buildings met modern murals and lively patios. This four-square-block area brims with personality, where old theaters have morphed into bars and boutiques, and art pops from brick walls in vivid swirls of color. I found myself strolling these streets, camera in hand, searching out every mural for a personal scavenger hunt through Greeley’s creative renaissance.



Where there’s art, there’s often good food, and Greeley proved no exception. At Rio Grande Mexican Restaurant I found Tex-Mex reminiscent of home, served with a Rocky Mountain twist and a patio perfect for people-watching. A few steps away, Luna’s Tacos & Tequila surprised me with weekend brunches, chorizo hash, and pork belly tacos that could tempt any traveler to linger. I scribbled menu notes and flavor descriptions in my journal—fuel for future writing and a reminder that travel writing often begins by savoring local tastes.




Saturday at the Greeley Farmers Market


The Greeley Farmers Market, held on Saturday mornings at Lincoln Park, is a vibrant centerpiece of local life and flavor—just the spot to immerse yourself in Northern Colorado’s agricultural richness. During my visit, I found it transformed from a simple civic space into a colorful tapestry of fresh produce, homemade pastries, and lively conversation. I browsed booths brimming with crisp veggies, fragrant herbs, and pastries and fluffy tortillas that had likely been made earlier that morning. I purchased a large bag for only $15 to fill with all the summer produce I could fit in it.  Local musicians strummed acoustic sets, filling the air with an easygoing rhythm that blended effortlessly with the sound of of small town vibes.




More than just a shopping trip, the Greeley Farmers Market offered me a connection to the area’s farming heritage and some delicious meals!





Colorado Coffee Corners: Fueling Creativity

Though my RV serves as a cozy hub, I often crave a change of scenery to recharge and reflect. I found refuge at The Coffee Bar at Charley’s & Co., where bottomless drip coffee and friendly faces of fellow patrons replaced the anonymity of larger chains. Another favorite, Aunt Helen’s Coffee House, rewarded my curiosity with floor-to-ceiling windows and a panoramic view of Greeley’s bustle.
